It is such a versatile and mild flavored food that it can be added to any meal of the day and many dishes! I was recently inspired by the overabundance of zucchini that my mom’s garden has been producing, to try some new and amazing zucchini recipes.
Not that zucchini stir fry ever gets old, but sometimes you need to try something different to keep it fresh and appealing. And I love the challenge of finding a recipe that everyone in my family loves. Picky eaters and all! Needless to say, I was excited to find out that my Zucchini enchiladas were such a hit. I didn’t get a picture the first time so they very reluctantly agreed to let me make them again. (That last sentence is dripping with sarcasm. They practically begged me to repeat the recipe. It’s always cool to discover that something you love to eat is also super healthy for you! I love zucchini in many different forms but I never knew that Zucchini was practically a super food. Low in calories and high in nutrients such as Vitamin A and C, potassium, folate, magnesium and copper as well as soluble and insoluble dietary fiber to aid in heart health. Zucchini’s high fiber and protein to carb ratio makes Zucchini a food that gives you that satiated, full feeling while consuming very little sugar and calories. It is a great choice for anyone on a diet or trying to live a healthier lifestyle.
